Tofu Skewers with Watermelon Salsa

For the Tofu Skewers:

14 ounces firm tofu, pressed and drained

2 tablespoons soy sauce

1 tablespoon olive oil

1 tablespoon maple syrup (or agave nectar)

1 teaspoon garlic powder

1 teaspoon smoked paprika

¼ teaspoon black pepper

8-10 skewers (wooden or metal)

For the Watermelon Salsa:

2 cups watermelon, diced (seeds removed)

1 small red onion, finely chopped

1 jalapeño, seeded and diced (adjust to taste)

¼ cup fresh cilantro, chopped

Juice of 1 lime

Salt to taste

Instructions
 

Prepare the Tofu:

    - Cut the pressed tofu into 1-inch cubes.

      - In a bowl, whisk together soy sauce, olive oil, maple syrup, garlic powder, smoked paprika, and black pepper until well combined.

        - Add the tofu cubes to the marinade, ensuring each piece is well-coated. Cover and let it marinate in the refrigerator for at least 30 minutes (or up to 2 hours for more flavor).

          Make the Watermelon Salsa:

            - In a large mixing bowl, combine the diced watermelon, chopped red onion, diced jalapeño, and chopped cilantro.

              - Squeeze the lime juice over the mixture and sprinkle with salt to taste. Gently toss to combine. Chill the salsa in the refrigerator while you prepare the skewers.

                Assemble the Skewers:

                  - Preheat your grill or grill pan over medium-high heat. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.

                    - Thread the marinated tofu cubes onto the skewers, leaving a bit of space between each piece to ensure even cooking.

                      Grill the Skewers:

                        - Lightly oil the grill grates to prevent sticking.

                          - Place the tofu skewers on the grill and cook for about 4-5 minutes on each side, or until the tofu is golden and has grill marks. Rotate skewers occasionally for even cooking.

                            Serve:

                              - Once grilled, remove the skewers from the grill and let them cool slightly.

                                - Serve hot alongside the refreshing watermelon salsa for dipping or spooning on top. Enjoy your colorful and delicious meal!
