Ingredients

2 large cucumbers

1 can of tuna (about 5 oz), drained

1 ripe avocado, mashed

2 tablespoons Greek yogurt

1 tablespoon Dijon mustard

1 tablespoon fresh lemon juice

2 tablespoons finely chopped red onion

1 tablespoon chopped fresh dill (or 1 teaspoon dried)

Salt and pepper to taste

Leafy greens (like spinach or arugula) for filling

Cherry tomatoes, halved (optional, for garnish)

Instructions

Prepare the Cucumbers: Slice each cucumber lengthwise into quarters. Use a spoon to gently scoop out the seeds, creating hollow boats for the filling. Set aside.

Make the Tuna Mixture: In a medium bowl, combine the drained tuna, mashed avocado, Greek yogurt, Dijon mustard, lemon juice, red onion, and fresh dill. Use a fork to mix until well combined and creamy. Season with salt and pepper to taste.

Assemble the Wraps: Take each cucumber quarter and lay a leaf of greens inside. Spoon the tuna mixture generously on top of the greens. You can fill them to your desired amount, but make sure not to overstuff.

Garnish: If desired, top the wraps with halved cherry tomatoes for an extra pop of color and freshness.

Serve: Arrange the cucumber wraps on a serving platter. Slice them into bite-sized pieces for easy eating, or leave them whole for a delightful hand-held snack.
