Tuna Tacos with Blueberry Slaw

For the Tuna Tacos:

1 lb fresh sushi-grade tuna, diced

1 tablespoon olive oil

1 teaspoon lime juice

1 teaspoon soy sauce

1 teaspoon sesame oil

1/2 teaspoon garlic powder

Salt and pepper, to taste

8 small corn or flour tortillas

For the Blueberry Slaw:

2 cups green cabbage, finely shredded

1 cup red cabbage, finely shredded

1 cup fresh blueberries, rinsed

1/4 cup carrots, grated

1/4 cup red onion, thinly sliced

2 tablespoons apple cider vinegar

1 tablespoon honey or maple syrup

Salt and pepper, to taste

Fresh cilantro, for garnish (optional)

Instructions
 

Prepare the Blueberry Slaw:

    - In a large bowl, combine the green cabbage, red cabbage, grated carrots, red onion, and blueberries.

      - In a separate small bowl, whisk together the apple cider vinegar, honey (or maple syrup), salt, and pepper until well mixed.

        - Pour the dressing over the slaw mixture and toss gently to combine. Taste and adjust seasoning if necessary. Set aside to let the flavors meld.

          Prepare the Tuna Filling:

            - In a medium bowl, combine the diced tuna, olive oil, lime juice, soy sauce, sesame oil, garlic powder, salt, and pepper. Mix gently to coat the tuna evenly without mashing it.

              Warm the Tortillas:

                - Heat a skillet or griddle over medium heat. Add the tortillas one at a time, warming for about 30 seconds on each side until pliable. Alternatively, you can wrap them in a damp paper towel and microwave for about 30 seconds.

                  Assemble the Tacos:
