1 large cucumber

8 ounces of deli turkey breast, thinly sliced

4 ounces cream cheese, softened

2 tablespoons fresh dill, chopped

1 tablespoon lemon juice

1 tablespoon mustard (optional)

Salt and pepper to taste

1 red bell pepper, cut into thin strips

Toothpicks (optional, for securing)

Instructions
 

Start by washing the cucumber thoroughly. Using a vegetable peeler or mandoline, slice the cucumber lengthwise into thin strips (about 1/8 inch thick). Lay the strips on a clean kitchen towel to absorb any excess moisture.

    In a mixing bowl, combine the softened cream cheese, fresh dill, lemon juice, mustard (if using), and a pinch of salt and pepper. Mix until well blended and smooth.

      Lay one cucumber strip flat on a clean surface. Spread a thin layer of the cream cheese mixture over the entire surface of the cucumber.

        Place a slice of turkey on top of the cream cheese layer, ensuring it covers the strip sufficiently. Add a couple of strips of red bell pepper at one end of the cucumber strip.

          Carefully roll the cucumber strip away from you, starting with the end that has the red bell pepper. Roll tightly but gently, so the filling doesn’t spill out.

            If needed, secure the roll with a toothpick to hold it together. Repeat the process with the remaining cucumber strips, turkey, and cream cheese mixture until all ingredients are used.

              Once all roll-ups are made, arrange them on a platter. You can serve them immediately or cover them and refrigerate for up to 30 minutes for a chilled snack.
