Turkey Lettuce Wraps with Lemon Glaze

Ingredients
  

1 pound ground turkey

2 tablespoons olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 red bell pepper, diced

1 carrot, grated

1 tablespoon soy sauce (or coconut aminos for a gluten-free option)

2 tablespoons hoisin sauce

1 tablespoon rice vinegar

1 tablespoon fresh ginger, grated

Salt and pepper to taste

1 head of butter or romaine lettuce, leaves separated and rinsed

2 green onions, sliced (for garnish)

Sesame seeds (for garnish)

Optional: crushed peanuts for added crunch

For the Lemon Glaze:

Zest of 1 lemon

Juice of 1 lemon (about 2 tablespoons)

2 tablespoons honey or maple syrup

1 teaspoon cornstarch mixed with 2 tablespoons water (for thickening)

Instructions
 

Prepare the Lemon Glaze: In a small saucepan, combine the lemon zest, lemon juice, honey, and cornstarch mixture. Cook over medium heat, stirring constantly until the glaze thickens, about 3-4 minutes. Remove from heat and set aside.

    Cook the Turkey: In a large skillet, heat the olive oil over medium heat. Add the finely chopped onion and sauté until translucent, about 3-4 minutes. Stir in the minced garlic, cooking for an additional 30 seconds until fragrant.

      Add Vegetables: Increase the heat to medium-high, then add the diced red bell pepper and grated carrot, cooking for another 2-3 minutes until softened.

        Season the Turkey: Push the vegetables to the side of the pan, add the ground turkey to the skillet, and break it apart with a spatula. Season with soy sauce, hoisin sauce, rice vinegar, ginger, salt, and pepper. Cook until the turkey is no longer pink, about 5-7 minutes.

          Combine Glaze and Turkey Mixture: Once the turkey is cooked, pour half of the lemon glaze over the turkey mixture, tossing to combine. Remove from heat.

            Assemble the Wraps: Spoon a generous portion of the turkey mixture into the center of each lettuce leaf.
