Zesty Eggplant & Cucumber Pasta

8 oz (225 g) of your favorite pasta (penne or fusilli works great)

1 medium eggplant, diced

1 medium cucumber, sliced into half-moons

3 cloves of garlic, minced

1 small red bell pepper, diced

1 teaspoon red pepper flakes (adjust to taste)

1 tablespoon olive oil

2 tablespoons lemon juice

1 tablespoon balsamic vinegar

Salt and pepper to taste

Fresh basil leaves, for garnish

Grated Parmesan cheese, for serving (optional)

Instructions
 

Prepare the Pasta:

    - Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve about 1 cup of pasta water, then drain and set aside.

      Sauté the Vegetables:

        - In a large skillet, heat the olive oil over medium heat. Add the diced eggplant and sauté for about 5-7 minutes, or until it becomes golden brown and tender. Stir occasionally to ensure even cooking.

          Add Flavor:

            - Once the eggplant is tender, add the minced garlic and red bell pepper. Sauté for an additional 2-3 minutes until the garlic is fragrant, being careful not to burn it.

              Combine Ingredients:

                - Add the cooked pasta to the skillet along with the cucumber, red pepper flakes, lemon juice, and balsamic vinegar. Toss everything together, adding reserved pasta water a little at a time to help create a light sauce.

                  Season It:

                    - Adjust the seasoning with salt and pepper according to your taste. If the mixture seems a bit dry, add more reserved pasta water until the desired consistency is achieved.

                      Serve:
