1 medium-sized seedless watermelon

1 cup feta cheese, crumbled

1/4 cup fresh mint leaves, chopped

1/4 cup balsamic glaze

1 cup arugula or mixed greens

1/2 teaspoon black pepper

1/2 teaspoon sea salt

1 tablespoon olive oil

Optional toppings: sliced red onions, avocado, or radishes

Instructions
 

Prepare the Watermelon: Cut the watermelon into 1-inch thick slices. Use a round cookie cutter or a sharp knife to cut out circles from each slice, resembling burger patties. You should get 6-8 circles depending on the size of your watermelon.

    Make the Feta Mixture: In a small bowl, combine the crumbled feta cheese, chopped mint leaves, olive oil, black pepper, and sea salt. Mix until well combined and set aside.

      Assemble the Sliders: Lay a watermelon circle on a serving plate. Add a generous spoonful of the feta mixture on top of the watermelon. Layer with arugula or mixed greens, then top with another watermelon circle to complete the slider. Repeat this process for the remaining watermelon and feta mixture.

        Drizzle the Glaze: Once all sliders are assembled, drizzle balsamic glaze over the top of each slider for that zesty finish.
