2 medium zucchinis

2 large carrots

1 red bell pepper, thinly sliced

1 cup cherry tomatoes, halved

½ cup red cabbage, finely shredded

¼ cup green onions, finely chopped

¼ cup fresh cilantro, chopped

¼ cup unsalted peanuts, crushed (optional)

3 tablespoons sesame oil

2 tablespoons soy sauce (or tamari for gluten-free)

1 tablespoon rice vinegar

1 tablespoon honey or agave syrup

1 teaspoon fresh ginger, grated

1 garlic clove, minced

Salt and pepper to taste

Instructions
 

Prepare the Vegetables: Using a spiralizer or a julienne peeler, spiralize the zucchinis and carrots into long noodle shapes. If you don't have either tool, you can use a regular vegetable peeler to create thin ribbons.

    Make the Dressing: In a small mixing bowl, whisk together the sesame oil, soy sauce, rice vinegar, honey (or agave), grated ginger, and minced garlic until well combined. Taste and adjust the seasoning with salt and pepper.

      Combine the Ingredients: In a large mixing bowl, combine the spiralized zucchini and carrot noodles, sliced red bell pepper, cherry tomatoes, red cabbage, green onions, and cilantro. Toss gently to mix.
