Zucchini & Corn Sheet Pan Bake

3 medium zucchinis, sliced into half moons

2 cups fresh corn kernels (or frozen, thawed)

1 red bell pepper, diced

1 small red onion, sliced

3 cloves garlic, minced

1 teaspoon dried Italian herbs (oregano, basil, thyme)

1 teaspoon smoked paprika

1/4 cup olive oil

Salt and pepper to taste

1 cup cherry tomatoes, halved

1/2 cup crumbled feta cheese (optional)

Fresh basil leaves, for garnish

Preheat the Oven: Begin by preheating your oven to 425°F (220°C). This will ensure a crispy texture for the veggies.

    Prepare the Vegetables: In a large bowl, combine the sliced zucchinis, corn kernels, diced red bell pepper, sliced red onion, and minced garlic.

      Season the Mixture: Drizzle the olive oil over the vegetable mixture. Add the dried Italian herbs, smoked paprika, salt, and pepper. Toss everything together until the vegetables are evenly coated.

        Spread on a Sheet Pan: Line a large baking sheet with parchment paper for easy cleanup. Spread the vegetable mixture evenly on the sheet, ensuring that everything is in a single layer for optimal roasting.

          Roast the Vegetables: Place the sheet pan in the preheated oven and roast for about 20-25 minutes, stirring halfway through, until the vegetables are tender and slightly caramelized at the edges.

            Add Tomatoes & Cheese: After 25 minutes, remove the pan from the oven and sprinkle the halved cherry tomatoes over the top. If using feta cheese, crumble it over the dish as well. Return to the oven for an additional 5-7 minutes, until the tomatoes are warmed through.

              Garnish & Serve: Once everything is roasted to perfection, remove from the oven and let it cool for a couple of minutes. Garnish with fresh basil leaves before serving for an extra burst of flavor.
