2 medium zucchinis, grated

4 large eggs

1/2 cup shredded mozzarella cheese

1/4 cup grated Parmesan cheese

1/4 cup fresh basil, chopped

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

1 tablespoon olive oil

Optional: additional vegetables (bell peppers, spinach, etc.) for filling

Prep the Zucchini: Place the grated zucchini in a clean kitchen towel and squeeze out excess moisture. This ensures that the omelet doesn’t become watery.

    Make the Egg Mixture: In a large bowl, whisk together the eggs, mozzarella cheese, Parmesan cheese, garlic powder, onion powder, salt, and pepper until the mixture is well combined.

      Cook the Zucchini: Heat the olive oil in a non-stick skillet over medium heat. Add the grated zucchini and sauté for about 2-3 minutes, just until softened. Remove from heat and let cool slightly.

        Combine Ingredients: Fold the sautéed zucchini and chopped basil into the egg mixture until evenly distributed.

          Cook the Omelet: In the same skillet, pour the egg-zucchini mixture and spread it evenly. Cook for about 4-5 minutes without stirring, until the edges start to set. Using a spatula, gently lift the edges to allow any uncooked eggs to flow underneath.

            Add Filling (Optional): If you’re using additional vegetables, add them on top of the omelet now, evenly distributing them.

              Roll the Omelet: Once the top is set but still slightly soft, carefully slide the omelet onto a plate. Using the plate as leverage, flip the omelet and roll it tightly from one end to the other, keeping it snug.

                Slice and Serve: Place the rolled omelet seam-side down on a cutting board, and slice into rounds. You can drizzle with additional olive oil or your favorite sauce if desired.
